Mixed Fruit Cobbler

Mixed Fruit Cobbler

Ingredients:

2 (15 1/4 oz) cans of dole tropical fruit salad, or substitute fruit cocktail
1 1/2 teaspoons cornstarch
1 1/2 teaspoons finely chopped lemon peel (optional)
1/3 cup packed brown sugar plus 1 tablespoon
1/2 cup flour
1/2 cup rolled oats
1 teaspoon cinnamon
1/4 teaspoon ginger
1/4 teaspoon nutmeg
1/4 cup butter or margerine, softened

Directions:

Preheat oven to 450°F. Pour the 2 cans undrained fruit into an 8 inch square baking dish. Stir in cornstarch until dissolved. Mix in lemon peel and 1 tablespoon brown sugar. COmbine flour, remaining brown sugar, oats and spices with a fork and then cut in the butter until it resembles crumbs. Sprinkle over fruit and bake 35 minutes.
