Avocado Baked With Seafood

Ingredients:

1 cup mayonaise
3/4 cup chopped celery
1/2 cup thinly sliced green onion
1/8 teaspoon salt
1/8 teaspoon pepper
1 can (4 1/2 ounce) crab meat, drained, flaked and cartilage removed, or 1/2 cup fresh crab meat
1 can (4 ounces) medium shrimp, rinsed and drained, or 1/2 cup fresh shrimp
4 large avocados, halved and pitted
1-2 tablespoons lemon juice
1/4 cup crushed potato chips (optional)

Directions:

Preheat oven to 350°F. In a bowl combine the mayonaise, celery, onions, salt, and pepper. Then add in the shrimp and crab meat mixing well. Peel avocados if desired, but they can be baked in the shell. Sprinkle the avocados with the lemon juice and then scoop in the seafood mixture and sprinkle on the potato chips if you like. Bake, uncovered for 25-30 minutes until bubbly.

Avocado Chicken Casserole

Avocado Chicken Casserole

Ingredients:

1/4 cup butter or margerine
1/4 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon each garlic powder, onion powder, dried basil, marjoram and thyme
1 1/2 cups milk
1 cup half-and-half
8 ounces medium egg noodles, cooked and drained
3 medium ripe avocados, peeled and sliced
3 cups cooked cubed chicken
2 cups (8 ounces) shredded cheddar cheese

Directions:

Preheat oven to 350°F. In a large saucepan, melt butter and then stir in flour and seasonings until smooth. Gradually add milk and cream, stirring until boiling and simmer for 2 minutes. Remove from the heat. In a greased 9 x 13 inch baking dish, layer half the noodles, avocado, chicken, white sauce and cheese. Repeat layers. Cover and bake for 25 minutes. Uncover and bake 5 minutes longer until bubbly.
