No-crust Pumpkin Pie

Ingredients:

1 (16 oz) can pumpkin
1 (12 oz) can evaporated skim milk
1/2 cup egg substitute, or two eggs, slightly beaten
3/4 cup sugar
1 teaspoon cinnamon
1/4 teaspoon all spice
1/4 teaspoon ginger
pinch of cloves
1/8 teaspoon salt
1/2 cup graham cracker crumbs
whipped topping for garnish

Directions:

Preheat oven to 350°F. In a mixing bowl combine the pumpkin, milk, eggs, sugar and spices blending well. Then add the graham cracker crumbs and mix well. Pour into a greased metal or glass pie plate and bake for 50-55 minutes or until a knife inserted in the center comes out clean. Cool and serve with whipped topping. This pie is great for thanksgiving for those who don't like crust ! No leftovers on the plate !

Oatmeal-Raisin Cookie Pie

Oatmeal-Raisin Cookie Pie

Ingredients:

3 eggs
1 cup light corn syrup
1/2 cup packed brown sugar
3 tablespoons melted butter or margerine
3/4 cup quick-cooking oats
1 tablespoon flour
1 teaspoon cinnamon
1/4 teaspoon salt
3/4 cup raisins
whipped cream or ice cream

Directions:

Preheat oven to 325°F. Beat eggs, corn syrup, sugar and butter. Add remaining ingredients, mix well and pour into crust. Place the pie pan on a cookie sheet and bake for 50 minutes until golden brown and the center is set. Serve warm or at room temperature with whipped cream or ice cream.
Yeild: 6-8 servings
