Apple-Cranberry Relish

Apple-Cranberry Relish

Ingredients:

3/4 cup sugar
1 cup orange juice
1 tablespoon finely chopped orange rind (optional)
1 1/2 pounds granny smith apples, pared, cored, chopped
1 (12 oz) package fresh cranberries
1/4 teaspoon ginger
1/4 teaspoon allspice
1/4 teaspoon cinnamon
1/2 cup raisins

Directions:

Combine orange juice, sugar and orange rind in a heavy saucepan and bring to a boil. Simmer until clear and sugar is dissolved, about 2 minutes. Add apples to the sauce pan and continue to simmer for 5 more minutes. Then add cranberries and spices and continue to simmer for 10 more minutes. Stir in raisins and remove from heat. Transfer to a serving bowl and cool before refrigerating.
For Thanksgiving, I make a double batch !

Cranberry-Banana Jello-Salad

Cranberry-Banana Jello-Salad

Ingredients:

1 (3 ounce) package rasberry jello
1 cup boiling water
1 can whole-berry cranberry sauce
2 medium bananas, sliced
1/2 cup chopped pecans, optional

Directions:

Dissolve jello in the boiling water. Add cranberry sauce and mix well breaking up the cranberry sauce. Refrigerate until it starts to set and then stir in bananas and pecans. Refrigerate until set.
Pam's Tip:Before adding the sliced bananas, sprinkle them with fruit fresh to keep them from browning or getting watery.
