Peachy Applesauce Salad

Ingredients: 1 cup diet lemon-lime soda (like squirt) 1 package (3 ounce) peach sugar-free gelatin 1 cup unsweetened applesause 2 cups reduced-calorie whipped topping 1/8 teaspoon nutmeg 1/8 teaspoon vanilla 1 fresh peach, peeled and chopped marishino cherry, mandarin orange segments and sprig of mint to garnish

Directions: In a saucepan, bring soda to a boil and then remove from heat and stir in gelatin until dissolved. Add applesauce and then chill until partially set. Fold in remaining ingredients and chill until firm. Yeild: 6 servings
