Pineapple Lime Ring

Ingredients: 1 (3 oz) package lime flavored gelatin 1 cup boiling water 1/2 cup cold water 1 tablespoon lemon juice 1 (8 oz) package cream cheese, softened and cubed 1 1/2 cups miniature marshmallows 2 (8 1/4 oz) cans crushed pineapple, drained

Directions: Dissolve gelatin in boiling water. Then add cold water, lemon juice and cream cheese, stirring until cream cheese is completely melted and mixed in. Chill until the mixture is thickened, but not set. Fold in marshmallows and pineapple and then pour into a 6 cup ring mold, chill until set. Unmold onto a serving platter and garnish with flaked coconut and more marshmallows if desired.

Rhubarb Salad

Ingredients: 4 cups fresh rhubarb, diced 1 1/2 cups water 1/2 cup sugar 1 (6 oz) package strawberry Jello 1 cup orange juice 1 teaspoon grated orange peel 1 cup sliced fresh strawberries

Directions: In a medium sauce pan over medium high heat, bring the water, sugar and rhubarb to a boil. Cook, uncovered, until rhubarb is tender, about 6-8 minutes. Remove from heat and stir in Jello until dissolved. Add orange juice and peel and mix well. Chill until thickened, but not set and then fold in strawberries. Pour into a 2 quart bowl and chill until set. Serve with a whipped cream and sliced fresh strawberries if desired.
