Directions:Dissolve gelatin in boiling water. Then add cold water, lemon juice and cream cheese, stirring until cream cheese is completely melted and mixed in. Chill until the mixture is thickened, but not set. Fold in marshmallows and pineapple and then pour into a 6 cup ring mold, chill until set. Unmold onto a serving platter and garnish with flaked coconut and more marshmallows if desired. |

Directions:In a medium sauce pan over medium high heat, bring the water, sugar and rhubarb to a boil. Cook, uncovered, until rhubarb is tender, about 6-8 minutes. Remove from heat and stir in Jello until dissolved. Add orange juice and peel and mix well. Chill until thickened, but not set and then fold in strawberries. Pour into a 2 quart bowl and chill until set. Serve with a whipped cream and sliced fresh strawberries if desired. |
