Gourmet Potatoes

6 Medium Potatoes -- boiled in skins, cooled, peeled, & shredded -- (best)
(OR -- 1 -- 2# bag -- Frozen Hash Browns)
2 Cups -- Shredded Cheddar Cheese
1/4 Cup -- Butter -- Softened
1 Tsp -- Salt
1/8 Tsp -- Pepper
1/3 Cup -- Chopped Green Onions (one bundle) -- You can use regular onion but Green Onion adds a lot
1 - 12 Oz Carton -- Sour Cream
Shred cheese and soften butter early. Add remaining ingredients and mix -- here's your favorite part -- it's easiest with your hands.
Spread mixture in a buttered 9 X 13 baking dish. Sprinkle with Paprika and dabs of Butter (about 2 Tbsp). You can also put a little of the shredded cheese on top too.
Bake for 30 - 35 minutes at 350 degrees. They're pretty tasty warmed over, too.
