Lutefisk Pudding

2 c. cooked lutefisk, flaked
1/2 c. rice
1 tsp. salt
1 c. water2 eggs
1/2 c. cream
1/2 c. milk
4 T. butter

Cook rice in water with salt until done. Drain. Beat eggs and add milk and cream. Fold in lutefisk. Pour over rice and put in 8-inch greased baking dish. Bake at 375 F for 30 minutes.

Variation: Half & half may be substituted for cream and milk.
