2 large firm tomatoes, chopped

1/2 c. diced purple onion
1/4 c. extra virgin olive oil
1/4 c. Feta cheese
Diced smoked herring to taste (approx. 1/8 c.; usually frozen meat section)
Salt and pepper to taste
1 large loaf sourdough bread, sliced
Stir together chopped tomato and onion. Pour in olive oil and stir just until coated. Add Feta cheese; toss lightly. Add herring in small amounts. (It can be overwhelming.) Taste; add salt and pepper as you decide. Serve as a topping, spooned onto slices of sourdough bread.
12 to 15 large scallops
1 can water chestnuts
1 pkg. sliced bacon
Toothpicks
Place a water chestnut on each side of a scallop; wrap all three with a piece of bacon. Hold in place with a toothpick. Cook on grill at medium-high until bacon is cooked. Turn over as needed.
