Chocolate Cake
To defat this favorite dessert,
replace a significant portion of
unsweetened or semi sweet
chocolate with cocoa, use fewer
egg yolks and reduce the
amount of fat. If the recipe calls for
a cup of butter or shortening,
for example, use 2/3 cup.
To reduce the amount of
fat, substitute nonfat or low-fat yogurt for
a small portion of the butter
or shortening.
