1 cup tomato juice
1 1/2 tsp snipped fresh
basil or 1/2 tsp.dried crushed basil
1 1/2 tsp snipped fresh
oregano or 1/2 tsp. dried crushed oregano
1 tsp olive oil or cooking
oil
1/8 tsp pepper
1 clove garlic, minced
1 pound beef top round steak
cut 1-inch thick trimmed of fat
2 large onions, thinly sliced
and separated into rings
For Marinade: Combine tomato
juice,basil, oregano, oil, pepper
and garlic. Set aside.
Cut meat into 4 serving-size
portions. Place meat in a plastic bag
set in a deep bowl.
Pour marinade over meat. Seal bag; turn to
coat meal well. marinate
in the refrigerator for 4 to 24 hours.
Drain steak, reserving marinade.
Place onions on an 18-inch
square of heavy foil.Turn edges of
foil up slightly. Drizzle
1/2 cup of reserved marinade over onions.
Fold foil lightly to seal.
Grill onion packet and meat on uncovered
grill directly over medium
coals for 10 minutes. Turn onion packet
and meat; brush meat with
marinade. Grill meat to desired doneness.
(medium doneness-8 to 10
minutes more) Grill onions for 8 minutes
or till tender. Unwrap onions
and serve with meat.
