Mini Quiche Tarts
Very tasty, pop one, then another, then another…just can’t stop!
For this you need two mini-muffin pans and there is a handy wooden tamper available too, but you could just use your thumb to flatten the dough balls into little cuplets.
I make this after a day when I had a bacon & egg breakfast and a Rueben dinner, you’ll see why.
˝ package cream cheese
2 teacups flour
1 stick butter
This will make the dough. Melt the butter and mix it with the flour, then cut in the cream cheese. Mix thoroughly with hands. Make walnut-sized balls and place one in each of the mini-muffin pan openings. Use tamper to press down and create cuplet.
4 strips bacon
1/3 onion, minced
2 thin slices Swiss cheese
Into each cuplet crumb a bit of bacon, add a sliver of cheese and a sprinkle of onions.
Whip 3 eggs in a measuring cup (or other cup with a pourspout) Add a few drops of water to thin slightly. Fill each cup to the top with the egg mixture.
Salt and pepper to taste.
Bake at 350 degrees for 15 to 20 minutes.
