New Year's Welcome

We went down to the city this year. I so wanted to see and feel and smell the fireworks in person. After surf and turf at Chessie’s we took a taxi to see the Violent Femmes (a MAJOR treat!), then onto Grant Park. Fireworks started before 12 at Buckingham Fountain, and after 12 at Navy Pier. We were sandwiched between the two! Oh My God! It was breathtaking! Happy New Year!!!!!!!!!!

Dinner was delicious, but too much for me so I asked for a take-home carton. With the leftover lobster I made Lobster Newburg and I actually did prime rib for a special New Year’s Day dinner. For the prime rib…I only had a small two-bone piece…I recalled reading about doing it at high heat, then reducing it. So that’s what I did, although I didn’t remember the exact instructions. It worked! For a two-bone, I stated it at 450 degrees for 35 minutes, and then turned the heat down to 350 degrees for 35 minutes. When the buzzer went off I just left it in the oven while I prepared the Lobster Newburg.

How did I do that snazzy pinky-coral Newburg sauce? Easy. It comes in a packet! Haha. Knorr Newburg Sauce. Just make this light, delicate sauce according to the directions on the packet, and then add chunks of lobster. It is scrumptious.

Then I ended up with too much leftover prime rib. I invited him back for tacos and still had leftovers, so I invited my neighbor for soup.

Here’s how I concocted it:

Place two prime rib bones in a crock-pot. Add two cans of Campbell’s Vegetable Beef Soup, two bouillon cubes, and a shake of salt and pepper. Add enough water to cover the bones.

Go away and do something fun.

Three or more hours later remove the meat from the bones. Discard bones and trimmed off fat.

Make noodles. Crack an egg in a bowl, add flour, (somewhere between ½ and ¾ cup is about right) and mix together. Add salt and pepper. Mix. Pat out the dough on a floured board and cut it into strips. Toss into the soup.

This was one of my BEST soups ever! The noodles were kind of big, but it still was good.
