The Amazing Carrott Cake
This is truly GREAT STUFF -- it takes a while to grate the carrots - but this is truly the best cake recipie around - and it is just as easy to make as somthing from a mix!
2 C. Flour
2 C. Sugar
2 t. Baking Soda
1 1/2 cinnamon
1/2 t. salt (opt.)
4 eggs
1 C. Oil
Mix together and beat well. Fold in . . .
2 C. grated carrots
1 C. Crushed Pineapple
1 C. Chopped Pecans (opt)
Bake in a greased 9x13 pan for 40 min. at 350. Cool and Frost with Cream Cheese Frosting
CREAM CHEESE FROSTING
4 oz. cream cheese
1/4 C. Butter REAL butter - not margerine
1/2 lb powdered sugar
1/2 t. vanilla (or more!)
Beat together and spread over cake
