Teriyaki Chicken

Purchased Oriental Salad Mix

Purchased Fried Rice

Purchased Cheesecake with Fresh Fruit Topping

Teriyaki Chicken

  • 1/4 cup purchased teriyaki baste and glaze
  • 1/8 teaspoon pepper
  • 4 boneless skinless chicken breast halves
  • 3/4 cup pineapple preserves
  • 2 tablespoons white wine vinegar

GRILL DIRECTIONS: Heat grill. In small bowl, combine teriyaki baste and pepper; mix well.

When ready to grill, brush chicken with teriyaki mixture. Place chicken on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals; cover grill. Cook 10 to 15 minutes or until chicken is fork-tender and juices run clear, turning once and brushing frequently with teriyaki mixture.

Meanwhile, in small saucepan, heat pineapple preserves and vinegar. Serve preserve mixture over chicken.

Prep time: 20 minutes

NOTE: To broil, place chicken on broiler pan; broil 4 to 6 inches from heat using times above as a guide.

Grilled Chicken with Melon Salsa

  • 1 cup chopped seeded assorted melon (cantaloup0e, honeydew and/or watermelon)
  • 2 tablespoons frozen lemonade concentrate, thawed
  • 1 tablespoon chopped fresh cilantro
  • 1 jalapeno chile, seeded, chopped (optional)
  • 1/2 teaspoon salt
  • 4 boneless skinless chicken breast halves or 8 boneless skinless chicken thighs.
  • 1/8 teaspoon pepper

GRILL DIRECTIONS: In medium bowl, combine melon, lemonade concentrate, cilantro, chile and 1/4 teaspoon of the salt; mix well. Cover; refrigerate until serving time.

2. Meanwhile, heat grill. Sprinkle chicken with pepper and remaining 1/4 teaspoon salt.

3. When ready to grill, place chicken on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals; cover grill. Cook 10 to 15 minutes for breasts or 8 to 12 minutes for thighs or until chicken is fork-tender and juices run clear, turning once. Serve chicken with melon salsa.

Prep time: 25 minutes

SERVING SUGGESTIONS: Serve this sweet-hot chicken with warm tortillas (warpped in foil and warmed on the grill), a wedge of cantaloupe and ice-cold lemonade.
