Giant Peanut Butter-Chocolate Chip Cookies

1 c. flour
1 t. baking soda
1/8 t. salt
1/2 c. sugar
1/2 c. packed dark brown sugar
1/2 c. shortening
1/2 c. peanut butter
1 egg 1/2 t. vanilla
1 c. semisweet chocolate chips
1/2 c. dry-roasted peanuts, chopped

Preheat oven to 350. Line 2 baking sheets with parchment. Mix flour, soda, and salt; set aside. In bowl beat next 6 ingredients until smooth. Beat in flour mixture until just combined; stir in chips and nuts. Roll dough into 8 balls; place 4 balls on each sheet. Using fork dipped in sugar flatten balls to 1/4 inch thick, redipping fork as needed. Bake 20 minutes. Cool on pans on rack one minute. Remove from pans; cool on rack.
