Banana Snack Cake

2-1/4 c. flour
1-1/4 t. baking soda
1/2 t. salt
1 c. butter, at room temperature
1 c. packed light brown sugar
3 eggs
3/4 c. buttermilk
1 c. mashed bananas, about 2 medium
2-1/2 t. vanilla, divided
1 pkg. cream cheese, at room temperature
1 c. powdered sugar

Preheat oven to 350. Butter a 9" x 13" cake pan. Sift together flour, baking soda and salt. In bowl with mixer at medium speed beat butter and brown sugar until fluffy, about 2 minutes. Beat in eggs, one at a time, until combined. Beat in flour mixture alternately with buttermilk. Beat in bananas and 1-1/2 teaspoons vanilla until just combined. Pour into pan. Bake 30 to 35 minutes or until toothpick inserted into center comes out clean. Cool in pan on rack. Beat cream cheese, powdered sugar and remaining vanilla until smooth and creamy. Spread over top of cake.
