1/2 c. butter
1 onion, diced
1 rib celery, chopped
1-1/4 t. poultry seasoning
1/4 t. salt
1/4 t. pepper
1 pkg. cubed herb-seasoned bread stuffing
1 pint fresh oysters, drained and coarsely chopped
In pot melt butter over medium-high heat. Add onion and celery; cook until onion begins to brown, about 7 minutes. With slotted spoon remove onion mixture from pot; set aside. To pot add 2-1/2 cups water, poultry seasoning, salt and pepper; bring to a boil. Remove from heat; stir in stuffing, reserved onion mixture and oysters until well combined. Fill cavities of turkey with stuffing. Place remainder in covered 2 quart casserole; place in oven about 30 minutes before turkey is done.
