3 egg whites, at room temperature
1 c. pumpkin
8 t. sugar
1 t. vanilla
1 t. maple extract
1/2 t. pumpkin pie spice
1 T. powdered sugar
Preheat oven to 350. In large bowl with electric mixer on high beat egg whites until stiff peaks form. Fold in pumpkin, sugar, vanilla, maple extract and pumpkin pie spice. Spoon into four 1/2 cup ramekins. Bake until golden brown, 20 minutes. Place powdered sugar in small strainer. Sprinkle tops with powdered sugar. Serve immediately.
