The Ultimate Caramel Chocolate Pecan Pie
Ingredients:Directions:
CRUST
2 c Finely chopped pecans
1/4 c Sugar
1/4 c Margarine; melted
FILLING
1 pkg 14oz. Kraft caramels (48)
1/4 c Milk
1 c Chopped pecans
1 pkg Semi-sweet chocolate-8 squares
1/3 c Milk
1 3/8 c Powdered sugar
1/2 t Vanilla
CRUST:
Heat oven to 350 degrees.
Mix pecans, sugar, and margarine.
Press onto bottom and sides of 9 inch pie plate.
Bake 12 to 15 minutes or until lightly browned. Cool.
FILLING:
Melt caramels with 1/4 cup milk in heavy saucepan over low heat, stirring frequently until smooth.
Pour over crust; sprinkle with pecans.
Stir chocolate, 1/3 cup milk, powdered sugar, and vanilla in heavy saucepan over very low heat just until melted.
Pour over caramel pecan filling spreading to edges of pie.
Refrigerate.
Serve with sweetened whipped cream, if desired.

Chocolate Truffle Pie
Ingredients:Directions:
2 C (12 oz) Semi-sweet chocolate chips
1 1/2 C whipping cream, divided
1/4 C confectioner's sugar
1 T vanilla extract
1 prepared chocolate cookie crumb pie crust
(optional) Whipped topping and broken Andee's Mint chocolates
Combine chips and 1/2 C whipping cream in microwave dish
Cook on high for 1-2 min, stirring every 30 sec, until smooth
Cool to room temperature
Stir in sugar and vanilla, set aside
In a small bowl, whip the remaining cream, forming soft peaks
One-third at a time, beat in the chocolate mixture at high speed
Mix well
Spoon into crust
Refrigerate for 3 hours or until set
Garnish with whipped topping and chocolate mint candies, if desired.
Makes 8-10 servings.

Apple Cheese Crisp
Ingredients:Directions:
4 apples, peeled, cored and thinly sliced
1/2 C water
2 t lemon juice
1/4 C butter
3/4 C sugar
3/4 t cinnamon
1/2 C flour
3/4 C grated cheddar cheese
Place prepared apples in a greased baking dish.
Pour water and lemon juice on top.
Mix flour, sugar, cinnamon, butter, and cheese until crumbly.
Sprinkle over apples.
Bake at 350 degrees for 30 minutes.

Strawberry Pizza
Ingredients: Directions:
2 sticks butter
3 T sugar
1 1/4 C flour
8 oz. Cream Cheese (softened)
1 C Confectioner's Sugar
2 C Whipped Topping
1 pint fresh strawberries, halved
Melt butter, either in a sauce pan or in a bowl in the microwave.
Stir in sugar and flour.
Pat mixture into a pizza pan
and bake at 350 degrees F for 10 minutes.
Crust should be light golden brown.
Cool completely.
NEXT:
Mix cream cheese, confectioner's sugar and whipped topping.
Spread on the cooled crust.
Refrigerate.
TOP WITH FRUIT JUST BEFORE SERVING.
(if you add fruit too soon, the juice will form "puddles" on the topping.)
