2 C (12 oz) Semi-sweet chocolate chips
1 1/2 C whipping cream, divided
1/4 C confectioner's sugar
1 T vanilla extract
1 prepared chocolate cookie crumb pie crust
(optional) Whipped topping and broken Andee's Mint chocolates |
Combine chips and 1/2 C whipping cream in microwave dish
Cook on high for 1-2 min, stirring every 30 sec, until smooth
Cool to room temperature
Stir in sugar and vanilla, set aside
In a small bowl, whip the remaining cream, forming soft peaks
One-third at a time, beat in the chocolate mixture at high speed
Mix well
Spoon into crust
Refrigerate for 3 hours or until set
Garnish with whipped topping and chocolate mint candies, if desired.
