Karen's Pecan Torte
Ingredients:Directions:
Crust:
60 Ritz Crackers, crushed
1 stick or 8 T margarine or butter
Filling:
2 sm or 1 lg pkg Instant Coconut Cream Pudding
1 1/2 C milk
1 qt. softened Butter Pecan Ice Cream
8 oz Cool Whip, thawed
Crust:
Combine crackers and margarine
Set aside 1/4 C for later
Pat remainder into a greased 9 X 13 pan
Filling:
Mix pudding and milk thoroughly
Add ice cream
Pour over cracker mixture
Top with Cool Whip
Sprinkle with extra crumbs
Refrigerate until firm

Elephant Ears Made Easy
Ingredients:Directions:
1 1/2 C sugar
2 t ground cinnamon
oil for frying(to 1/2 in depth in pan)
1 pkg flour tortillas
Combine cinnamon and sugar in a 9 in pie plate
Heat oil in frying pan
Cook 1 tortilla at a time
Turn after 5 seconds
Cook for 10 seconds more, or until lightly browned
Remove...allowing excess oil to drip back into pan
Place in sugar mixture, turning to coat
Serve immediately
For smaller portions, slice the tortillas
into quarters before cooking

Praline Grahams
Ingredients:Directions:
12, 4 3/4 X 2 1/2 in Graham Crackers,
divided into 1/4's (along perforations)
1/2 C margarine
1/2 C packed brown sugar
1/2 C finely chopped walnuts
Preheat oven to 350 degrees F
Line a 15 X 10 X 1 pan with heavy aluminum foil
Place quartered crackers in single layer in pan
Heat margarine and sugar in sauce pan
Bring to a rolling boil, over med heat for 2 min
Remove from heat and add nuts
Pour over crackers
Bake for 10 min, or until lightly browned
Cool in pan for 3-5 min
Remove and finish cooling on wire racks
Makes 4 dz

Chop Suey Cake
Ingredients:Directions:
2 c. flour
2 c. sugar
2 eggs
2 tsp. soda
1/2 tsp. salt
1 c. nuts
1 8 oz can crushed pineapple, undrained
FROSTING:
8 oz. pkg. cream cheese
1 cube oleo
2 c. powdered sugar
1 tsp. vanilla
2 tsp. milk
Mix all together well.
Bake in a 9 x 13 inch pan at 350 degrees for 35 to 40 minutes.
While cake is still hot frost with previously listed frosting recipe. FROSTING:
Cream cheese and oleo together.
Blend in the rest of the ingredients.
Spread on hot cake.
