Chicken Polynesian -Pat/Recipe of the Day
Ingredients:Directions:
8 pieces of chicken breast
sm. onion, chopped
2 tbs. butter
peel of 1 orange (fresh is best)
1 tbs. chicken stock base
2/3 pt. sour cream
ground coriander
cayenne pepper
salt & pepper to taste
3 pieces glazed ginger cubes
Brown chicken in small amount of oil.
Remove.
Sauté onion in oil until transparent.
Put chicken back in pan and add butter.
Cover 2/3 chicken with hot water.
Add pepper, stock base, pinch of coriander and 2 cubes ginger.
Simmer 40 min.
Remove chicken and debone.
Set aside.
Add grated orange peel, sour cream and 1 more cube ginger.
Stir.
Add chicken and cook until cream sauce is bubbly.
Serve over a bed of cooked rice.

Turkey Crescents -Michele:ROD Exchange
Ingredients: Directions:
2 c white turkey meat, skinless, cooked and cubed
4 oz. fat free cream cheese, softened
1 c red and green bell peppers, chopped
1/2 c onions, chopped
1/2 tsp. salt
1/4 tsp. black pepper
2 tbsps skim milk
8 oz reduced fat crescent dinner rolls
Preheat oven to 350.
In mixing bowl, combine turkey,
cream cheese, bell peppers, onions, salt,
black pepper, and milk.
Mix until well blended.
Perforate rolls in twos.
Then, close perforations with fingers to form rectangle.
Divide turkey mixture into 4 portions.
Spoon onto rectangle shaped dough.
Pull 4 corners toward center
and close sides by pressing together.
Bake 25 minutes.

Turkey Corn-Muffin-Wiches -Michele:ROD Exchange
Ingredients:Directions:
17 oz. corn muffin mix
4 whole egg whites, slightly beaten
2/3 c. skim milk
4 c. white turkey meat,
skinless, cooked and cubed
1 c. onions, chopped
1 c. red and green bell pepper s, chopped
1/2 tsp. sage
Preheat oven to 400.
Prepare 15 muffin pans with cooking spray;
set aside.
Empty packages of corn muffin mixes
into a mixing bowl.
Add egg whites and milk.
Mix well using a fork.
Stir in turkey, onions, bell peppers, and sage.
Spoon batter into prepared pans.
Bake 15 minutes.
Cool 5 minutes.
