Side Dishes

Beefy Beans : ROD Exchange
Ingredients: Directions:
1 lb. ground beef
1 onion, chopped
1/2 lb. bacon, cut up
1 cup brown sugar
1 cup ketchup
1 or 2 cans each kidney,
butter, or pork and beans, drained
1/3 cup vinegar
2 teaspoons dry mustard
1 teaspoon garlic powder
2 teaspoons salt
Brown bacon, drain fat.
Fry onions in bacon grease til soft.
Drain and set aside.
Brown beef, drain.
Add seasonings.
Simmer 30 minutes.
Mix in beans, bacon and onions.
Place in large baking dish
and bake at 325 degrees for 45 minutes
or in crockpot on low for 2 hours.

Cheesy Potatoes -Adella:ROD Exchange
Ingredients: Directions:
32 oz. frozen hash browns or O'Brien potatoes
3/4 cup melted butter
1/2 cup chopped onion
1 can cream of chicken soup, undiluted
1 (8 oz.) sour cream
1/2 cup milk
1 cup shredded cheddar cheese
2 cups crushed corn flakes
Combine 1/2 the butter, all the
potatoes, onion, soup, sour cream and
cheese and put in 9 x 13 inch casserole.
Combine crushed corn flakes and
rest of butter and put on top.
Bake at 350 degrees for 50 min.
Great with ham.

Cream Cheese Mashed Potatoes :ROD Exchange
Ingredients:Directions:
3 pounds whipped potatoes, salted
1/4 pound butter
6 ounces cream cheese, at room temperature
1 chopped green pepper
1 bunch sliced scallions
1/2 cup grated Cheddar cheese
1/2 cup Parmesan cheese
Add all ingredients
to potatoes, beating constantly.
Should be moist;
if not, add cream and butter.
Bake in oven-proof serving dish uncovered
at 350 degrees for 30 minutes.

Easy Red Beans and Rice -Adella:ROD
Ingredients: Directions:
1 small onion, chopped
1 medium bell pepper, chopped
1 lb. smoked sausage, sliced
3 cans of dark red beans
Black pepper and salt to taste
Rice
Put beans in a pot on high and cook to boiling.
Begin rice in separate pot,
following the directions given with the particular rice you choose.
In a pan, begin frying sliced sausage
with chopped onions and bell pepper.
Add pepper and salt as you like it.
When beans are ready and starting to
look "mushy", add to sausage
mixture on medium heat.
Stir occasionally.
Once rice is ready, serve with sausage
mixture on top in generous portions.
