Cooking Substitutes... When You Can't Get To The Store
I don't know if this happens in your kitchen but it sure does in mine...you find a new recipe...decide to try it...and half way into mixing it up...find out you don't have a vital ingredient! Well, I've compiled a list of possible substitutes for when you're in a pinch. But, then again...if your kitchen is anything like mine...half of the substitutes aren't there either. But maybe a neighbor will have it!
Baking Substitutions...
- Use:...1/4 t baking soda plus 1/2 t cream of tartar
- .........1 C all-purpose flour
- ..........1 C plus 2 T cake flour
- ..........1 C minus 2 T all-purpose flour
- .........1 T cornstarch (thickener)
- ..........2 T flour OR 1 T tapioca
- .........1 C bread crumbs
- ..........3/4 C cracker crumbs
- .........2 oz Compressed Yeast
- ..........3 (1/4 oz packets) Dry Yeast
- .........3 C Dry Corn Flakes
- ..........1 C Crushed Corn Flakes
- .........3 Medium Bananas
- ..........1 C Mashed Bananas
- .........1 lb. Whole Dates
- ..........1 1/2 C Pitted and Cut Dates
- .........1 C self-rising flour
- ..........1 1/2 t baking powder and 1/2 t salt in a measuring cup, adding all-purpose flour to equal 1 cup.
Sweet Substitutions...
- Use:...1 to 1 1/4 C sugar plus 1/4 C liquid needed in recipe OR 1 C Molasses OR Corn Syrup
- .........1 C granulated sugar
- .......1 C packed Brown Sugar OR 1 C Corn Syrup OR Molasses OR 1 C Honey minus 1/4 C liquid needed in recipe
- .........1 (2/3 oz) Semisweet Chocolate
- .......1 oz. Unsweetened Chocolate plus 4 t Sugar
- .........10 Mini Marshmallows
Dairy Substitutions...
Use:...1 C Sour Milk OR Buttermilk plus 1/2 t Baking Soda
.......1 C Sweet Milk plus 1 T Vinegar OR Lemon Juice OR 1 C Yogurt
.......1 C Sour Milk OR 1 C Yogurt
.......7/8 C Skim Milk plus 3 T Butter
.......3/4 C Skim Milk plus 1/3 C Butter

.......7/8 C Sour Milk plus 3 T Butter
.......1/2 C Evaporated Milk plus 1/2 C Water OR 1 C Reconstituted Nonfat Dry Milk plus 1 T Butter
Seasoning Substitutions...
Use:1 C Tomato Sauce plus 1/2 C Sugar plus 2 T Vinegar
......1/4 t of each: Oregano, Basil, Thyme, Rosemary, plus Dash of Cayenne Pepper
......1/2 t Cinnamon plus 1/8 t Cloves
......1/8 t Garlic Powder OR 1/8 t Instant Minced Garlic OR 3/4 t Garlic Salt OR 5 drops of Liquid Garlic
......3 T fresh cut herbs
