1/4 stick or 2 T butter or oleo 5 eggs
1/4 C flour 1/2 t baking powder dash of salt 1 can(4 oz) green chilis, chopped 1 C small curd cottage cheese
2 C shredded Monterey jack cheese | Preheat oven to 400 degrees. Place butter or oleo in 9" square pan
and set into oven to melt. Remove pan from oven, tipping to coat bottom with melted butter or oleo and set aside.
In large bowl, beat eggs. Stir in flour, baking powder and salt. Add melted butter or oleo and set pan aside.
Stir in chilis, cottage cheese, and Monterey Jack cheese. Mix until blended. Turn batter into butter coated pan.
Bake at 400 degrees for 15 minutes. Reduce heat to 350, and bake 30-35 more minutes, or until lightly browned.
Cool slightly. Cut into 1 1/2 " squares. Makes about 36 appetizers. |
