Orange Glazed Pecan Halves -Billie/GA (pecan farmer's wife): from the Idea Exchange
Ingredients:Directions:
2 C pecan halves
1 C sugar
1/4 C orange juice
Combine sugar and orange juice in 1 quart microwave safe dish, mixing well.
Add pecans, coating with mixture.
Microwave on medium for 5 minutes.
Stir and cook on medium 7-8 minutes until syrup crystalizes.
May take little longer if pecans are especially large.
Spread and separate glazed nuts on buttered cookie sheet to cool.
Makes a great gift when packed in a decorative jar.
They harden so they will not need to be refrigerated.

They make great gifts.
Make sure they are good and dry (not "green")
Place in heavy weight freezer bags or in glass jars
...especially canning type jars.
Put a circle of fabric over the lid and rim and tie with ribbon and it really looks special.
Add a recipe or two for good measure.
By the time January rolls around, be sure and place pecans in the freezer though... so you can use them later in the year.
Or just toast them and keep in tightly sealed jars or tupperware-type plastic.
Munch at your leisure.

This is my recipe for Chocolate Pecans. Quick, EASY, and loved by all. I always take these as a desert at church. I also like to pack in tins for gift-giving.

Chocolate Pecans -Billie/GA: from the Idea Exchange
Ingredients:Directions:
Almond Bark Chocolate Candy Coating - 3 squares
1 - 2 cups pecan halves (or pieces for clusters)
1 T solid shortening
Lightly toast pecans by microwaving on high about 2 or 3 minutes. (NO butter or salt needed)
Allow to cool completely
Melt squares of chocolate in microwave - usually 2 minutes.
Mix shortening into chocolate and stir until well blended and all liquid.
Add 1/2 pecans to chocolate and stir until covered.
Dip out one half at time and place on wax paper covered cookie sheet.
Add other 1/2 of nuts as room allows.
If doing clusters with pieces, scoop out spoonfuls and place on wax paper.
Quick cool by placing pan in freezer for 5 -10 minutes.
Put in tins or jars to store. Best kept for long periods in frig.

Smores -Eddie: A Front Porch Chef
Ingredients:Directions:
1\3 c light corn syrup
1 Tbs. butter
5 chocolate bars(Hershey's)
1 tsp. vanilla
4 c honey grahams cereal
1-1\2 c marshmallows
Put syrup and butter in a pan and bring to a boil.
Then add chocolates bars and vanilla.
Stir in honey grahams cereal and marshmallows.
Pat into buttered cake pan and cool.
When this batch is done ... have 'smore' :oÞ
