Emmy's Pumpkin Bread -shared by Angie: from the IE
Ingredients: Directions:
1 cup vegetable oil
2 2/3 cups sugar
4 large eggs
1 16 oz can pumpkin
2/3 cup water
3 1/3 cups flour
1/2 t baking powder
2 t baking soda
1 1/2 t salt
1 t nutmeg
1 t vanilla
1 1/2 cups chocolate chips
1 cup chopped walnuts
Grease 2, 9x5 loaf pans.
Preheat oven to 350 degrees F
In large bowl, beat oil
and sugar,
add eggs, pumpkin and water.
Add flour (reserving 1 T),
baking powder, baking soda, salt,
nutmeg and vanilla,
stirring to blend.
Toss chips in reserved flour
to keep them from sinking to the bottom.
Stir chips and nuts into batter.
Spoon batter into greased pans.
Bake 1 hour until cake tester
comes out clean in center.
Cool in pans 10 min.
Turn out and cool completely on wire rack.
Wrap in foil and
store overnight before serving.

Chocolate Chip Pumpkin Muffins by Rachelle: from the IE
Ingredients:Directions:
2 eggs
1-1/4 cup sugar
1 (16 oz.) can pumpkin
3/4 cup oil or applesauce
1/4 cup milk
3 cups flour
2 tsp. baking soda
2 tsp. baking powder
1 tsp. ground cinnamon
1 tsp. salt
1/2 cup chocolate chips
In a large mixing bowl,
beat eggs, sugar, pumpkin,
oil or applesauce, and milk until smooth.
Combine flour, baking soda,
baking powder, cinnamon, and salt;
add to pumpkin mixture and mix well.
Stir in chocolate chips.
Fill greated muffin cups 2/3 cups full.
Bake at 375 degrees for about 20 minutes.
Cool in pan 10 minutes before
removing from muffin tins.
Makes 24 muffins.
These also freeze well.

Pumpkin Muffins by Jan: from the IE
Ingredients:Directions:
4 eggs
2 cups white sugar
3 cups all purpose flour
1 tblsp cinnamon
1 tsp salt
1 1/2 cups oil
1 3/4 cups canned pumpkin
2 tsp baking powder
2 tsp baking soda
Beat eggs slightly.
Add sugar,oil,pumpkin,
and beat thoroughly.
Add dry ingredients and mix until smooth.
Fill greased muffin cups 2/3 full
and sprinkle tops with brown sugar.
Bake at 375 for 15-20 minutes

I also have somewhat adapted this to a lower fat version
by replacing half of the oil (3/4 cup) with applesauce.
Additionally, I only put in two whole eggs
and four egg whites instead of 4 eggs. -Jan

Light White Chocolate/Raspberry Dessert -Evi/Pickering: From the IE
Ingredients:Directions:
24 light graham crackers
1 pkg white chocolate lite pudding mix
1 tub of cool whip
1 tin of fruit pie filling
(Weight Watcher leader used raspberry)
Prepare pudding according to package
Layer ingredients in the following order:
12 graham crackers
white chocolate pudding
12 graham crackers
fruit pie filling
cool whip
Do this in the morning and leave
until dinner time.
