24 Hour Salad -May/AZ: From the IE
Ingredients:Directions:
1 med head of lettuce (iceberg)
1 cup thinly sliced onion
1 cup thinly sliced celery
1 green pepper, thinly sliced
(optional)
1 can water chestnuts
1 pkg frozen peas(10 oz)
2 cups of mayonnaise
1 teaspoon sugar
1/2 tsp. salt
1/4 tsp pepper
1 cup (4 oz) shredded Mozzarella cheese
1/2 cup (2 oz) grated parmesan cheese
Cherry Tomatoes,
bacon bits,
little parsley for garnish.
Shred lettuce and place it in bottom of 9X13 dish.
Top with layers of onion, celery, green pepper and sliced water chestnuts.
Sprinkle with layer of frozen peas;
spread with layer of mayonnaise.
Sprinkle with mixture of sugar,salt and pepper.
Top with Mozzarella and Parmesan cheese.
Cover tightly with foil or plastic and refrigerate 24 hours.
Garnish with tomatoes, bacon bits and parsley just before serving.
Makes 12 servings.

Broccoli Salad -Kaye:From the IE
Ingredients:Directions:
2 heads of fresh broccolli
1 lb. Cheddar cheese
1 lb. bacon fried crisp
Dressing
1 cup of Mayonaise
1/4 cup of granulated sugar
4 tbsp. red wine vinegar
Wash and cut up broccoli.
Dry broccolli.
Add cheese and crumbled up bacon.
Mix well.
Mix all dressing incredients together well.
Add to broccolli, cheese and bacon mixture.**

**Note recipe says to mix it all together but I like to keep
the dressing seperate and let each person serve their own.
This keeps the left over salad from becoming soggy.
A slice of red onion is awesome with this if you like onions.

Awesome Jello Salad -Heather : From the IE
Ingredients: Directions:
1 small box of vanilla NON-INSTANT pudding and pie filling
1 small box orange jello
1 small tub of cool whip
1 large can of chunk pineapple
2 small cans of mandarin oranges
Prepare the vanilla pudding according to the directions
on the box tell you but substitute water for the milk.
Once you have brought the vanilla mixture to a boil,
pour in the orange jello powder** and mix this.
Put it in the fridge until it is COMPLETELY cooled.
Once this happens, mix in the cool
whip and drained fruit.
Then chill for a couple of more hours (it's better this way).
You can also add bananas but I don't like them because they turn brown too quickly.
** You can use any kind of flavored jello like raspberry, or
cherry and then add the appropriate fruit but I like the orange.

Green Salad -LuAnn: From the IE
Ingredients:Directions:
1 large head iceberg lettuce
1 large head cauliflower, cut up
1 pound bacon, fried crisp and crumbled
small red onion, sliced paper thin
Dressing:
2 cups mayonnaise
3 tablespoons sugar
1/3 cup parmesan cheese
salad seasoning
seasoned croutons
Layer the vegetables and bacon into a bowl, in the order given to the left
In another bowl, mix together the dressing ingredients seen at left
Spread this mixture over the layered salad ingredients.
DO NOT MIX.
Sprinkle Salad Seasoning heavily on top.
Seal bowl securely and place in fridge for 24 hours.
Toss just before serving, adding seasoned croutons.
This is very yummy; but I only make it once a year at Christmas.
The cholesterol level of this dish is
too high for this girl!
(And substitutions don't work well.)
