Jim's Cranberry Relish- Marion: A Front Porch Chef
Ingredients:Directions:
1 pound fresh cranberries
1 small-med. naval orange, quartered but with peel left on
1-1/2 cup sugar (1 cup is usually enough, but do to your taste)
3 Tbsp. bourbon or Grand Marnier
Put half the berries and half the orange in a food processor.
Process, turning on and off quickly,
until it's evenly chopped to a pretty finetexture,
but not smooth - leave it in teeny, teeny pieces.
Repeat with other half of berries and orange.
Then put all the berries and orange in the food processor and add sugar and alcohol.
Process just to mix;adjusting sugar, if needed.
Keep in fridge in airtight container.
Can double recipe.
Best if made a day or two ahead.

Baked Squash -Cindy: from the Idea Exchange
Ingredients:Directions:
White "patty-pan" squash, approximately 2 lbs.
1/2 to 1 lb. bulk sausage
1 med-large yellow onion--chopped
sour cream (Fat free works fine)
bread crumbs for topping
Cut up squash and cook until tender.
Brown sausage and crumble.
Sautee` onion (I frequently do this
with the sausage to save time and dirty pans!)
Drain fat.
Put sausage/onion in casserole dish.
Mix in sour cream to moisten/coat ingredients.
Mix in squash and adjust sour cream to desired moistness.
Top with bread crumbs and bake at 350 degrees until hot throughout.

Picnic Potatoes -Kateo: A Front Porch Chef
Ingredients:Directions:
2 pkgs Country Style Oreida Hash Browns
1 pkg of Oreida chopped onions
8 oz sour cream
1 lb of velveeta cheese
Place one package of hash browns in 13X9 pan.
Then spread chopped onions over them.
Put sour cream in and mix.
Slice 1/2 lb of velveeta and lay on top.
Cover with second bag of hashbrowns.
Slice rest of cheese and put on top.
Season with pepper and garlic powder.
Cook at 325 for 45 minutes.
Top should be brown.

Broccoli Casserole -Kateo: A Front Porch Chef
Ingredients: Directions:
2 pkg frozen broccoli
1 pkg Oreida chopped onion
1 lg jar of Cheez Whiz
1 box of Ritz or TownHouse crackers
4 eggs
Stir frozen brocolli, onions,
2 tubes of crackers (crushed), and Cheez Whiz
(melt in microwave until pourable) together in a bowl or pan.
Fold in eggs (do not over mix).
Place in pan or casserole dish.
Sprinkle top with crushed crackers.
Dot butter on the top.
Bake @ 325 for 45 min to one hour or until top is lightly brown.
Note: Can be made ahead
and refrigerated until ready to bake.
