CRAB MEAT SALAD ON FRIED NOODLES- Kateo: A Front Porch Chef
Ingredients: Directions:
2, 6oz pkgs of frozen or canned crab meat
1, 10 oz pkg frozen pea's, thawed,
1 C celery, diced
1 Sm onion, diced
3/4 C mayonaise
1 T lemon juice
1/8 t curry powder
1 t soy sauce
1/8 t garlic salt
1 1/2 C fettucini, broken in 3-4"pieces
Peanut oil
Fresh parsley, chopped
Combine first 4 ingredients & toss well
Combine next 5 ingredients, mixing well.
Pour over crab mixture & toss lightly.

Chill.
Cook fettucini, according to pkg directions.
Drain, rinse with cold water & drain.
Pat almost dry with paper towels or put in salad spinner.
Heat oil to 350 degrees in a lg skillet or wok.
Drop several noodles into hot oil and stir to separate. Note:Oil will splatter if noodles are not dry
Fry about 1 minute or until lightly brown.
Drain on paper towels.
Repeat procedure with remaining noodles.
Serve crabmeat mixture over noodles.
Sprinkle with parsley.
Yield: 6 wonderfully delicious servings!Unless I am your guest...then there are only 2!

MARINATED CARROTS- Pam: A Front Porch Chef
Ingredients: Directions:
2 lb carrots
1/2 C white sugar
1 onion, sliced
1/2 C white vinegar
1 green pepper, sliced
1/2 C olive oil
1 10 oz. can of Tomato Soup
Pare and slice carrots.
Cook in a small amount of water until just a wee bit tender.
( You don't want them cooked too soft...wee bit tender, wee bit crisp.)
Drain and cool.
Slice onion and pepper and add to cooled carrots.
Combine the rest of the ingredients and pour over the carrots.
Cover and refrigerate.
Anyone got lots of carrots they just don't know what to do with.
I hated carrot salad until a co-worker brought this to a BBQ.
We use this as a nice side dish for be it a full
salad dinner... or Roast beef or Turkey dinner.

and it's one less thing to worry about at the last minute.

Sweet Potatoes 1: from the Idea Exchange
Ingredients:Directions:
Sweet Potatoes
(however many necessary to feed your crowd)
butter
Leaving the skin on, make a 2-3 inch slit (1 inch deep) down the center of the sweet potatoes
Place butter in the slits of the potatoes
Wrap tightly in foil
Bake them in the oven during the last 1 1/2 hours of cooking time fo the turkey.

Ingredients: Directions:
Sweet Potatoes, enough to feed the crowd
Butter
Brown sugar
Boil potatoes as you would for making regular mashed potatoes
Mash with butter and brown sugar, to taste.
Some people like to put it in a casserole dish with mini marshmallows on top...
baking until marshmallows are melted and golden.
You can also add cinnamon or nutmeg for a nice change of pace.
