Herbed Apple Stuffing -Andi: A Front Porch Chef
Ingredients:Directions:
1/4 C instant minced onion
1 1/4 C water, divided
8 C, about 14 pieces, of firm white bread cubes
3 C pared, cored and finely chopped apples
3/4 C chopped walnuts
1/2 stick or 4 T butter/oleo, melted
1 1/2 t salt
1 pinch black pepper
1 t sage
1 egg, lightly beaten
In cup, combine minced onion, and 1/4 c. water. Set aside 10 minutes to soften.
In large bowl, combine bread cubes, apples, walnuts, butter, salt and pepper, sage and egg.
Add reserved onion and remaining 1 c. water.
With spoon, or your hands, mix well.
Turn into a well greased casserole.
Bake uncovered, at 350 degrees F until apples are tender, or about 40 minutes.

Seven Layer Salad 2 -Eddie of TN: A Front Porch Chef .... quick, easy and good for those that like salads
Ingredients:Directions: :
1 med head of lettuce, shredded
1 C coarsely chopped celery
1/2 C coarsely chopped green pepper
1 C coarsely chopped red onion
1 10-oz pkg frozen green peas, separated (of course)
1 1/2 C mayonnaise (miracle whip is okay, too)
2 T sugar
2 1/2 C mild Cheddar Cheese, grated
8 strips of Bacon, cooked, drained and crumbled
Arrange lettuce in bottom of 9x13 inch dish.
In layers, add other vegetables (thus Seven Layered Salad :o).
DO NOT TOSS!!
Spread the mayonnaise evenly over top layer.
Sprinkle with sugar and cheddar cheese.
Cover and refrigerate at least 4 hours.
Sprinkle bacon over salad just before serving.
Cut into squares and 'dig in' :o)
10-12 servings.
This recipe was recalled from Ms. Daisy's Tea Room in Franklin, TN

and has been a highlight of my 'holiday' meals since then.
Shhhhhhhh ... don't tell her though!

Cranberry Chutney - Sandie:A Front Porch Chef
Ingredients: Directions:
1 1/2 C fresh or frozen cranberries
1 large orange,(peeled and cut-up)
1 C firmly packed brown sugar
1/3 C golden raisins
2 T chopped onion
1 t finely chopped, chrystalized ginger
1/4 t cinnamon
In a 1 1/2-quart microwave-safe bowl, combine all ingredients
Cover with waxed paper.
Microwave on HIGH for 6 1/2 to 9 minutes or until cranberries pop open, stirring twice during cooking.
Let stand until thickened and cool.
Store in refrigerator.
Makes 2 cups

Pistachio Salad -Carrie: from the Idea Exchange
Ingredients: Directions:
1, 3oz pkg instant pistachio pudding mix
1 can crushed pineapple, drained
1 lg apple, diced
1 lg container whipped topping, thawed
Chopped pistachio nuts (optional)
Mini marshmallows (optional)
Mix pudding with pineapple
Mix into whipped cream.
Fold in apple, marshmallows, and nuts (optional)
