Bacon & Tomato Cups

Little buttermilk biscuit cups are baked
with a savory mixture of bacon and tomato inside.

8 slices bacon
1 tomato, chopped
1/2 onion, chopped
3 ounces shredded Swiss cheese
1/2 cup mayonnaise
1 teaspoon dried basil
1 (16 oz) can buttermilk biscuit dough

Preheat oven to 375 degrees F.
Lightly grease a mini muffin pan.
In a skillet over medium heat, cook bacon until evenly brown.
Drain on paper towels. Crumble bacon into a
medium mixing bowl, and mix with tomato, onion,
Swiss cheese, mayonnaise and basil. 
Separate biscuits into halves horizontally.
Place each half into cups of the prepared mini muffin pan.
Fill each biscuit half with the bacon mixture.
Bake for 10 to 12 minutes in the preheated oven,
or until golden brown.



Hot Pizza Dip

All your favorite pizza ingredients in a hot dip
made in the microwave. Serve with
sliced French baguette bread.

1 (8 oz.) pkg. cream cheese, softened
1/2 teaspoon dried oregano
1/2 teaspoon dried parsley
1/4 teaspoon dried basil
1 cup shredded mozzarella cheese
   1 cup grated Parmesan cheese
1 cup pizza sauce
2 T. chopped green bell pepper
2 ounces pepperoni sausage, chopped
2 tablespoons sliced black olives
,br> In a small bowl, mix together the cream cheese,   
oregano, parsley, and basil.
Spread mixture in the bottom of a 9 inch pie plate,
or a shallow microwave-safe dish.
Sprinkle 1/2 cup of the mozzarella cheese
and 1/2 cup of the Parmesan cheese
on top ofthe cream cheese mixture.
Spread the pizza sauce over all.  
Sprinkle with remaining cheese, then top with
green pepper, pepperoni and olive slices.
Cover, and microwave for 5 minutes.  Serve hot.
