First layer:
2c. graham crumbs
1/2 stick melted butter
Press into bottom of rectangular cake pan
Second layer:
2 c. confectioners sugar
2 sticks softened margarine
2 eggs
Mix these ingredients and pour over graham crust.
Third layer:
1 large can crushed pineapple
Fourth layer:
4 -5 bananas sliced
Fifth layer:
1 container of cool whip
spread over entire cake
Sixth layer:
Crushed walnuts sprinkled
Seventh layer:
Marichino cherries dotted on cake.
Lazy Daisy Oatmeal Cake
1 1/4 c. boiling water
1 c. oatmeal
1 c. sugar
1 c. brown sugar
1/2 c. margarine
2 eggs
1 1/2 c. flour
1 t. vanilla
1/2 t. salt
3/4 t. cinnamon
1/4 t. nutmeg
1 t. baking soda
Topping:
1/4 c. margarine melted
1/2 c. brown sugar
3 T. milk
3/4 c. coconut
Pour water over oatmeal. Cover and let stand 20 minutes.
Cream butter, gradually adding sugars. Mix well.
Sift together flour, soda, salt, cinnamon and nutmeg.
Add to creamed mixture, and mix well.
Pour into 13x9x2" well geased pan.
Bake 350 degrees 50 to 55 mins.
Mix together ingredients for topping, and spread over cake.
Broil until frosting becomes bubbly. Watch closely.
Cinnamon Struesel Cake
1/2 c. margarine softened (1 stick)
1/2 c. light brown sugar
1/2 c. sugar
2 eggs, at room temp.
1 t. vanilla
1 t. baking powder
1/2 t. baking soda
1/2 t. salt
2 1/4 c. flour
1 1/3 c. sour cream
Struesel:
1 c. firmly packed light brown sugar
2/3 c. flour
3/4 c. pecans, finely chopped
1 1/2 t. ground cinnamon
5 T. plus 1 t. (1/3 cup) cut up margarine
Heat oven to 350 degrees. Grease a 10 inch tube pan.
Struesel: In medium bowl stir brown sugar, flour, nuts and cinnamon.
Add margarine and stir with a fork until crumbly.
Cake:
Beat margarine in a large bowl until fluffy, about 3 mins.
Add sugars, one at a time, and beat until well blended.
Add eggs one at a time, on medium, beating till blended.
Reduce mixer speed to low and beat in vanilla,
baking powder, salt and baking soda.
Beat in half the flour, then the sour cream.
When blended, beat in remaining flour.
Spread half the batter into the prepared pan.
Top with half the streusel. Carefully spoon on remaining batter.
Spead smooth, and crumble with remaining struesel, so it adheres to cake.
Bake 1 hour and 10 mins. till wooden pick iserted comes out clean.
Let cool, run knife around edges to loosen.
Carefully remove to serving plate.
