4 thick pork chops
1 can cream of mushroom soup
1/4 c. milk
1/2 c. chopped onion
1 small head cabbage (cut in 4 wedges)
2 c. sliced celery
1 t. oil or shortening
1 c. sliced celery
Salt and Pepper to taste
In bottom of dutch oven, heat oil, and brown chops.
Stir in soup, milk, onion, and seasonings.
Cook over low heat 25 mins.
Add vegetables, cook 20 min. more until done.
Michelle's Italian Chicken
6 chicken pieces (breasts, thighs,)
6 large potatoes
1 bag frozen french cut green beans
2 T. olive oil
2 cloves chopped garlic
Fresh rosemary
Salt & Pepper to taste
Heat oil in dutch oven over medium high heat.
Add fresh garlic and brown chicken on all sides.
Cover with about 2 sprigs of chopped rosemary.
Peel potatoes and cut into 1 1/2 in. chunks.
Add potatoes to pot, and frozen green beans.
Sprinkle with appoximately 3 more sprigs of fresh
chopped rosemary and salt & pepper.
Cover and cook approximately 30 mins. until chicken juices
run clear and potatoes are tender.
Classic Chicken Divan
3 chicken breasts, cooked and thinly sliced
2 bunches fresh brocolli (or 2 10oz. frozen)
1/2 c. heavy cream
2 c. chicken broth
1/4 c. butter
1/4 flour
1/2 c.Shredded Parmesean cheese
Salt & Pepper
Steam brocolli until tender, and drain.
Place spears crosswise in 13x9x2 in. baking dish.
Melt butter, blend in flour. Add chicken broth and cook,
stirring constantly till mixture thickens. Stir in cream, salt and pepper.
Pour half the sauce over the brocolli. Top with chicken slices.
To remaining sauce add 1/4 c. Parmesean cheese., and pour over chicken.
Sprinkle with remaining parmesean cheese, and bake at 350 degrees
for 20 mins. until hot. Then broil just till sauce is golden brown.
Cheesy Ham Casserole
2 c. fresh or frozen brocolli florets, thawed
1 1/2 c. (6 oz.) sharp cheddar cheese, divided
1 1/2 c. coarsely chopped ham
1 1/2 c. (4 oz.) rotini pasta cooked, drained
1/2 c. Miracle Whip
1/4 c. chopped green pepper
1/4 c. chopped red pepper
1/4 c. milk
3/4 c. seasoned croutons (optional)
Heat oven to 350 degrees. Mix all ingredients except 1/2 c. cheese and the croutons. Spoon into 1/1/2 qt. casserole dish.
Sprinkle with remaining cheese and croutons. Bake 30 min.
