Pasta Salad

1 lb. pasta (cooked,drained, & cooled), 6 boiled eggs, 1 cup chopped celery, 1/2 cup chopped green pepper, 1 med. chopped onion, 1/2 cup sweet relish, 1 large bag shredded montery jack cheese. Mix the following dressing and pour over and mix well.

Dressing

2 1/2 cups of mayo, 1 cup sugar, 1/2 cup white vinegar, and 1/2 tsp. dry mustard.


Chocolate Zucchini Cake

1/2 cup vegetable oil, 1/2 cup (1 stick) margarine, 1 3/4 cup sugar, 2 eggs, 1/2 cup sour milk, 1 tsp. vanilla, 2 1/2 cups flour, 1/4 cup unsweetened cocoa, 1 tsp. soda, 1/2 tsp. baking powder, 1/2 tsp. salt, 1/2 tsp. cinnamon, 2 cups shredded zucchini, 1 cup semi-sweet choc. chips, 1-1 1/2 cups chopped walnuts (optional).

Sprinkle the choc. chips over batter and bake in 9x13 pan for 35-45 minutes at 325 degrees.


Zucchini Cake

2 cups sugar, 1 1/2 cups vegetable oil, 4 eggs, 2 cups flour, 2 tsp. cinnamon, 2 tsp. baking soda, 2 tsp. baking powder, 3 cups shredded zucchini**, 1/2-1 cup chopped pecans (optional).

Bake in 13x9 pan for 40-50 minutes at 350 degrees - cool and ice with cream cheese icing.

Cream Cheese Icing

8 oz. cream cheese, 1 tblsp. vanilla, 1/2 cup (1 stick) margarine, 1 box (16oz.) powdered sugar. **NOTE-Use shredded carrots instead of zucchini for another great cake.


Zucchini Cobbler

5 cups zucchini - peeled, seeded and sliced, 1/2 cup lemon juice, 3/4 cup sugar, 1 tsp. cinnamon, 1/2 tsp. nutmeg.

Cook zucchini 15 minutes or until tender-add sugar, cinnamon and nutmeg-simmer another minute and remove from heat.

4 cups flour, 1 1/2 cups sugar, 1 1/2 cups margarine-chilled. Mix until coarse crumbs-then add 1/2 of this crumb mix to the zucchini mixture.

Take 1/2 of remaining crumb mix and press into lightly greased 9x13 pan-Spread zucchini mixture over top then crumble remaining crumb mix over zucchini. Sprinkle over all with 1 tsp. cinnamon. Bake at 375 degrees for 35-45 minutes.


Zucchini Patties

4 cups shredded zucchini, 1/2 tsp. salt. Let stand 15 minutes and squeeze out moisture. Stir in: 2 eggs, 6 Tblsp. parmesan cheese, 1/2 clove garlic-finely minced.

Mound 2 Tblsp. mixture in pan and flatten to make patty-Cook in hot oil or butter-cook 6-8 minutes turning once.


Oven Fried Chicken

1 cup of milk, 1 cup cornmeal, 1 cup flour, 3 tsp. salt, 2 tsp. chili powder, 1/2 tsp. oregeno,

1/4 tsp. pepper 1 stick of butter, melted.

Dip chicken in milk and then coat with flour mixture. Place in greased 9x13 pan and drizzle with butter. Bake uncovered for 60 minutes at 375 degrees.


Easy Brownies

1 small box instant choc.pudding, 2 cups milk, 1 choc.cake mix, 1 1/2 cups choc.chips, 1 cup chopped nuts (optional).

Mix pudding and milk for 2 minutes. Add cake mix (dry) and mix well, then stir in choc. chips and nuts. Pour into 9x13 greased cake pan. Bake 35 - 40 minutes at 350 degrees. Sprinkle top with powdered sugar.


Apple Cake

2 eggs, 2 cups sugar, 1/2 cup oil, 1 tsp. vanilla, 2 cups flour, 1/2 tsp. salt, 1 tsp. baking soda,

2 tsp. cinnamon, 1/4 tsp. nutmeg, 4 cups diced apples, 1 cup chopped nuts.

Pour into a greased 13x9 pan and bake in a preheated 350 degree oven for 45 minutes.

Cream cheese frosting

1 pkg. cream cheese (3oz.), 3 tblsp. butter, pinch salt, 1/2 tsp. vanilla, 1 1/2 cups powdered sugar.


Egg Noodles

3 egg yolks, 1 egg, 3 tblsp. cold water 1 tsp. salt, 2 cups flour

Beat eggs well, beat in salt and water. Stir in flour and divide into 3 parts, roll each as thin as possible on lightly floured board. Cut and dry.


Hash Brown Casserole

2 pounds Frozen Hash potatoes thawed, 1/2 cup Margarine(melted), 1 teaspoon salt, 1/2 teaspoon black pepper, 1 cup onion chopped fine, 1 can cream of chicken soup, 2 cups Colby cheese, grated

Spray 9x13 baking pan with cooking spray. Combine soup, margarine, salt, pepper, onions and cheese. Gently mix in potatoes and pour into baking pan. Bake uncovered at 350 degrees for 35 minutes.


Cinnamon Rolls


Bread Machine Recipe

7 oz. + 2 tblsp. warm milk, 1 egg, 1/2 tsp. salt, 4 tblsp. marg., 3 cups bread flour, 3 tblsp. sugar, 2tsp. active dry yeast, (OR 1 1/2 tsp. bread mach. yeast)

Bread select- dough

Filling

Marg., sugar, cinnamon, nutmeg, chopped nuts,

Knead dough about 1 minute then let rest 15 minutes. Roll dough into rectangle, spread marg., sprinkle with sugar, cinnamon, nutmeg and chopped nuts. Roll up tightly and press edges to seal. Cut and place into greased 13X9 baking pan. Let rise about 30-45 minutes. Bake in preheated oven 375* for 20-25 minutes or until golden brown. Drizzle with pwd. sugar icing.

Icing- 1 cup powered sugar, 1-2 tblsp. milk and 1/2 tsp. vanilla


Zucchini Pie

6 cups zucchini-peel, slice and remove seeds.Add very little water, bring to a boil-simmer until tender-cool and drain. 1 1/4 cup sugar, 1 1/2 tblsp. flour, 1 1/2 tsp. cream of tarter, 1 1/2 tsp. cinnamon, dash of salt and nutmeg.

Mix and pour over drained zucchini-place into 9 in. pie crust. Cover with top crust and bake 40-50 minutes at 400*


Ham Loaf

2-21/2 lbs. Ham loaf mix, 2 tblsp. horseradishsauce, 2 eggs, 1 cup seasoned bread crumbs, 1/2 small onion-chopped, and 1/2 green pepper-chopped.

Glaze - 1 bottle of chili sauce and 1 cup brown sugar.

Mix well, shape into loaf and place in covered pan. Top with 1/2 of glaze and bake at 250* for 3 hr. Pour remaining glaze on and let bake about 30 minutes more.


Bar-B-Que Meatballs

A favorite with co-workers

60 - 80 meatballs (cooked)

1- 2lb. jar of grape jelly and 2 bottles chili sauce.

Heat chili sauce and jelly until sauce is smooth.
Add meatballs and simmer until meatballs are hot.


Sweet and Sour Meatballs

1/3c water, 3Tblsp. vinegar, 1Tblsp. soy sauce, 1/2c brown sugar, 3Tblsp. cornstarch, bring to a boil and thicken.Then add 1 20oz. can pineapple chunks (drained),1 lg. green pepper-chopped, and 25-30 cooked meatballs and simmer until meatballs are hot.


Monkey Bread

3, 10oz. can biscuts, 1 cup sugar,2 tsp cinnamon,1 stick marg.,1 cup brown sugar,2 Tblsp. water,and 1 cup chopped nuts.

Put nuts in bottom of bundt pan. Mix sugar and cinnamon together in plastic bag. Cut each biscut into 4 pieces and shake in bag and layer on top of nuts.

Boil marg.,brown sugar and water for 1 minute and then pour over biscuts.

Bake for 35 minutes at 350 Turn onto plate while still hot.


Basic Cookie Mix

8 cups all purpose flour, 2 1/2 cups sugar, 2 cups brown sugar, 4 tsp. salt, 1 1/2 tsp. baking soda, and 3 cups vegetable shortening.

Mix dry ingredients, cut in shortening. Place in airtight container and store in cool place. Use within 3 months or freeze for up to 6 months.


Snickerdoodles

2 1/2 cup basic cookie mix, 1/4 tsp. baking soda, 1 tsp. cream of tarter, 1 egg, 2 tblsp.sugar, and 1 tsp. cinnamon.

Combine cookie mix, baking soda, cream of tarter, egg and mix well. Shape dough into balls and roll in sugar/cinnamon mix.

Bake on greased cookie sheet at 400 degree for 8-10 minutes.


Chocolate Chip Cookies

3 cups basic cookie mix, 3 tblsp. milk, 1 tsp. vanilla, 1/2 cup chopped nuts, 1 cup chocolate chips, and 1 egg.

Combine cookie mix, milk, vanilla, and egg. Mix well and stir in nuts and chips. Drop by teaspoonful onto greased cookie sheet.

Bake at 375 degree for 10-15 minutes.


Peanut Butter Cookies

3 cups basic cookie mix, 1/4 cup brown sugar, 1 tsp. vanilla, 2 eggs, and 1/2 cup chunky peanut butter.

Combine all ingredients and shape into balls. Place on greased cookie sheet and flatten with fork.

Bake at 375 degree for 10-12 minutes.


Basic Oatmeal Cookie Mix

4 cups all purpose flour, 4 cups whole wheat flour, 4 tsp. salt, 2 tsp. baking powder, 2 tsp. baking soda, 6 cups brown sugar, 3 cups vegetable shortening, 8 cups quick rolled oats.

Mix all dry ingredients Except Oats. Cut in shortening, then stir in oats. Place in airtight container and store in a cool dry place. Use within 3 months or freeze for up to 6 months.

2 cups oatmeal cookie mix, 1/2 cup chunky peanut butter, 1/3 cup honey, and 1/2 tsp. vanilla.

Combine all ingredients. drop by teaspoonful onto greased cookie sheet.

Bake at 375 degree for 10-12 minutes.


Spice-Raisin Cookies

6 cups basic oatmeal cookie mix, 2 eggs, 1/2 cup milk, 1 tsp. cinnamon, 1/2 tsp. nutmeg, 1/2 tsp. cloves, 1 cup raisins, and 1/2 cup chopped nuts.

Blend cookie mix, eggs, milk, and spices well. Stir in raisins and nuts. Drop by teaspoonful onto greased cookie sheet.

Bake at 350 degree for 12-15 minutes.


Oatmeal Cookies

3 cup basic oatmeal cookie mix, 1/4 cup milk, 1 tsp. vanilla, 1 egg, 1/2 tsp. cinnamon, 1/4 tsp. cloves, and 1/2 cup raisins.

Beat together milk, egg, and vanilla. Mix in the cookie mix and spices, stir in raisins. Drop by teaspoonful onto greased cookie sheet.

Bake at 350 degree for 10-15 minutes.


Oatmeal Chippers

6 cup basic oatmeal cookie mix, 6 oz. choc. chips, 1/2 cup chopped nuts, 2 eggs, 1/2 cup milk, and 2 tsp. vanilla.

Beat together eggs, milk, and vanilla. Add remaining ingredients.Drop by teaspoonful onto greased cookie sheet.

Bake at 350 degree for 12-15 minutes.


Grandma's Bread Pudding

6-8 C any type bread, cut in 2" pieces, 4 C milk, 2 C sugar, 8 T butter, melted, 3 eggs, 2 T vanilla, 1 C raisins, 1 C chopped pecans (optional), 1 T cinnamon, 1 T nutmeg.

Combine all dry ingredients. Add all other ingredients. Mixture should be very moist. Pour into buttered 9 x 12" or larger baking dish. Place into non-preheated oven. Bake at 350 degrees for apprx. 1 hour and 15 minutes, until top is golden brown. Serve warm with sauce (see recipe below).

"GRANDMA'S SAUCE"

1/2 C butter, 1 1/2 C powdered sugar, 2 egg yolks, 1/2 C fruit juice.

Cream butter and sugar over medium heat until all butter is absorbed. Remove from heat and blend in egg yolk. Pour in juice gradually to your own taste, stirring constantly. Sauce will thicken as it cools. Serve warm over warm bread pudding.

Makes 16-20 servings


APPLE DIP

1/2 cup creamy peanut butter, 1/2 cup caramel ice cream topping

Mix well and heat in microwave on high for 45-60 seconds.Core and sliced apples for dipping.


APPLE CREAM PIE

Combine 6 cups sliced apples with 1/2 cup brown sugar, 1/2 cup sugar, 1/4 cup flour, 3/4 tsp. ground ginger, 1/2 tsp. nutmeg, and 1/8 tsp. ground cloves. Pour into unbaked pie shell. Pour 1/2 cup heavy cream over apples and sprinkle with 1 Tblsp. brown sugar.

Bake at 400 degrees for 50 - 60 minutes.


APPLE BREAD PUDDING

Butter and cube 8 slices white bread, peel and slice 6-8 apples, then alternate layers of bread and apples. Mix 2 cups milk, 3/4 cup brown sugar, 2 eggs, and 1/4 tsp cinnamon. Pour this mixture over bread and apples.

Bake at 350 degrees 45 minutes or until apples are tender.


FRUIT DIP

Mix well 2 (8oz.) pkg. cream cheese, 1 small jar marshmallow cream, 1 box of powered sugar, and 1 (8oz.) bowl cool whip.

Serve with fruit of choice.


CARAMEL CRUNCH APPLE PIE

4 granny smith apples, peeled, cored and cut into wedges 2/3 c plus 2 tblsp. all-purpose flour,one 9 in. deep dish pie crust 25 vanilla caramels,1 tblsp. water 1/2 c sugar,1/2 tsp. cinnamon,1 stick butter 1/2 c chopped walnuts

Preheat the over to 375 degrees.

Combine apples and 2 tblsp. flour, tossing to coat the apples, and spoon into the pie shell.

In medium saucepan, combine the caramels and water over medium heat, stirring until the caramels melt and the mixture is smooth. Spoon the caramel mixtue over the apples.

In a medium bowl, combine the remaining 2/3 c flour, sugar, cinnamon, and butter, stirring until crumbly. Add the walnuts, mix well, sprinkle over the pie and place the pie on baking sheet.

Bake for 40 - 45 minutes, or until the apples are tender.


CUSTARD PIE

Blend 6 large or 7 medium eggs with 1 cup of sugar, add a pinch of salt, sprinkle with cinnamon. Mix well then stir in 2 cups of milk. Pour into unbaked pie shell and sprinkle the top with nutmeg.

Bake in a preheated 425 degree oven for 15 minutes, then for 45 minutes at 350 degrees.
