                               Lentil Puree

  1              pound  dried lentils
  8             ounces  chopped green chilies
  1                cup  chopped onion
     1/2      teaspoon  garlic powder
     1/4      teaspoon  cumin -- dried
     1/2      teaspoon  salt
Bring 5 cups of water to a boil in a large pot. 
Rinse and drain lentils, removing any stones that may be present.
Add lentils to water. Cover and simmer 40 minutes over medium heat, until tender. 
Remove from heat and allow to cool slightly in the pot.
Place all ingredients in a food processor or blender. Divide into two batches if 
necessary. 
Puree until smooth. If puree is too thick, add 1/4 cup of water.

You know, this is great with some of those low fat baked Tostitoes chips dunked in!!
It's originally a side dish, but we love it as a dip. It's also awesome spread on 
hot French bread - little parmesan sprinkled on top - can't beat it!
