Red Pepper Chicken With Noodles

I love this!!! In fact, we had it for dinner the other night! The kids were going to turn their little noses up at it - but low and behold - they LIKED it!!! Miracles never cease! Of course I still get the comments "Is this fat free?" But at least they LIKED it!

 

2 teaspoons olive oil

10 ounces skinless boneless chicken breast

1 teaspoon dried basil leaves

1/2 teaspoon crushed dried rosemary leaves

1/4 teaspoon salt

1/4 teaspoon freshly ground black pepper

1 cup chopped scallions

1 cup roasted chopped red bell peppers

8 ounces cooked red kidney beans

2 cups cooked wide egg noodles (hot)

1 1/2 ounces part-skim mozzarella cheese, shredded

 

In large non stick skillet, heat oil; add chicken. Sprinkle with basil, rosemary, salt and pepper; cook over medium high heat, stirring frequently, 4-5 minutes. Stir in scallions; cook, 2-3 minutes, until chicken is lightly browned. Add bell peppers and beans to skillet; stir to combine. Reduce heat to low; simmer 5 minutes. until sauce thickens slightly. Add noodles; toss to mix well. Sprinkle with cheese.

Makes 4 servings
