Savory Chicken and Mushrooms

6 Points Per Serving

 

Cooking spray

2 (8-ounce) packages sliced fresh mushrooms

2 cups frozen diced cooked chicken breast

1 (10-ounce) container refrigerated light Alfredo sauce

3/4 tsp. dried thyme

1/4 tsp. salt

1/4 tsp. pepper

2 Tbs. dry sherry

4 slices whole wheat bread, toasted

 

1. Coat a large nonstick skillet with cooking spray; place over medium-high heat until hot. Add mushrooms, and cook 5 minutes or until tender. Add Chicken and next 4 ingredients; cook until thoroughly heated, stirring occasionally. Add sherry, stirring well. 2. Cut toast slices in half diagonally, and place on four individual serving plates. Spoon chicken mixture evenly over toast.

Yield: 4 servings

For a quick meal: Serve with Maple-Glazed Carrots (coming next) and fresh spinach salad.
