Spicy Mexican Chicken and Rice

3 Points Per Serving

 

1 package- Tyson Time Trimmers diced (cubed) chicken

1 can- Diced Tomatoes w/ green chiles (14.25 oz)

1 cup uncooked rice

I can't believe it's not butter spray

 

Heat up the chicken in a frying pan. I use NO oil! After the chicken is warmed set it aside. Spray the frying pan with 10 (or so) sprays of I Can't Believe It's Not Butter spray. Saute the rice until it's golden brown. While the rice is browning, drain the tomatos (but save the liquid). Add enough water to the tomato liquid to equal 1 cup. After the rice is browned, add all the ingredients to the pan. Stir and wait for it to boil. After it boils, turn down the heat and simmer for 20 mintues, or until the rice is cooked.

It serves 6 at 3 points a serving!!!!!!!!!

I'll warn you it's a little spicy. If you don't like your item hot, try regular tomatoes or tomatoes and green peppers.
