Blueberry Bran Muffins

1.6 Points Per Muffin

 

1-1/4 cups whole wheat flour

3/4 cup oat bran or wheat bran

1/3 cup sugar

1 tsp baking soda

2 tsp baking powder

1 cup vanilla or lemon non-fat yogurt

2 egg whites

1 tsp vanilla

3/4 cup fresh or frozen blueberries (if using frozen, add them to the batter while still frozen)

 

*Combine the flour, bran, sugar, baking soda and baking powder and stir to mix. Add the yogurt, egg whites, and vanilla and stir just until the dry ingredients are moistened. Fold in the blueberries.

*Coat muffin tins with nonstick cooking spray and fill evenly with batter. Bake at 350º F for 16-18 minutes or until an inserted toothpick comes out clean.

*Remove the muffin tin from the oven and allow to sit for 5 minutes before removing muffins

* Makes 12 muffins 1.6 POINTS per muffin
