Scalloped Salmon and Sweet Potatoes

2 pounds sweet potatoes/yams
2 cups skim milk
2 1/2 tablespoons corn starch
1 grated onion
Thyme to taste
Salt and pepper to taste
3/4 pound (or large can) of salmon, deboned/skinned
1/4 cub bread crumbs
Dash cayenne pepper
1 tablespoon margarine
2 tablespoons parmesan cheese
Cook the potatoes 30 minutes
Overlap sliced potatoes (1/4-1/3") in pan
Preheat oven to 350º
Whisk milk, cornstarch, onion, thyme, salt and pepper - bring to a boil, reduce and simmer - will become quite thick
Break the salmon into chunks and scatter over top of the potatoes
Pour the sauce evenly overtop the potatoes and salmon
Melt the margarine and stir in the crumbs and cayenne and sprinkle over the top
Bake for 30 minutes
Parmesan on top and broil until browned
