Wild Rice Baked Chicken

2/3 cup wild rice, uncooked

4 stalks celery, sliced

1 medium green bell pepper, diced

1-1/3 cups water

2 teaspoon chicken bouillon, granules

1 teaspoon salt

2 whole skinless chicken breasts

Soy Sauce, low-salt

 

1. In bowl, thoroughly wash Wild Rice, drain in strainer. 2. In non-stick sprayed 2-qt casserole or baking dish. Mix wild rice, celery, green peppers, water, bouillon, and salt. 3. Skin and half chicken breasts and place on top of rice mixture; brush with soy sauce. 4. Cover dish, bake in 350F oven for 1-1/2 hours or until chicken is 160ºF and the rice is tender.

Makes 4 servings.
