Jenn's Meatloaf

1 pound 92% lean, 8% fat ground beef

1 cup instant rice

1 cup lentils -- red

1/2 cup Egg Beaters® 99% egg substitute -- or 2 egg whites

6 whole wheat bread slices -- broken up

1 onion -- chopped fine

1 stalk celery -- diced

2 cups tomato juice without salt

1 package onion soup mix

2 cups water

salt and pepper and garlic powder -- to taste

 

Mix all ingredients except of the tomato juice, onion soup mix and the water. Form a log roll or a round ball. Place in a small roasting pan and cover with tomato juice, water and onion soup mix. Stir well. Cook in the oven covered for 40 minutes.

MICROWAVE INSTRUCTIONS: Mix all ingredients except of the tomato juice, onion soup mix and the water. Form a log roll or a round ball (you may have to split it in half depending on the size of your microwave and the casserole dish or microwave pot your using). Place roll or rolls in 1 or 2 microwave safe casserole dish, or microwave pot. Cover with tomato juice, water and onion soup mix. Stir well. Cook in the microwave uncovered for about 8 minutes turning frequently until a fork breaks loaf apart
