Lone Star Steakhouse & Saloon Black Bean Soup

The following recipe is an imitation of the black bean soup they serve at Lone Star Steakhouse. I've made it a few times (before joining weight watchers) and it is easy, low fat, filling and absolutely delicious!!!!! This comes to 8 points for the whole recipe (not including the optional sour cream for a garnish).

Serves 4 as an appetizer or 2 big healthy servings as an entree

2 15-ounce cans black beans (7.5 points)

1/4 cup diced red onion (0 points)

2 tsp chopped pickled jalapeno slices (0 points)

1 tsp sugar (.5 points)

1 tsp cider or wine vinegar (0 points)

2 cloves garlic, minced (0 points)

1/4 tsp salt (0 points)

1/4 tsp cayenne pepper (0 points)

1/2 tsp chili powder (0 points)

Garnish

4 teaspoons chopped red onion

6 to 8 jalapeno slices

1 tbsp sour cream

Pour the beans along with the liquid into a medium saucepan. Add the remaining soup ingredients and mix. Bring the soup to a boil, then reduce the heat to low and simmer, covered for about 1 hour, adding water if necessary or until it is as thick as you like. Serve each bowl of soup with a garnish of red onion, jalapeno slices, and sour cream arranged carefully in the center of the soup.

I usually get 4 servings out of the recipe and add 1 tbsp low fat sour cream to each bowl. So each serving will be 2.5 points.
