A Fish Called Wanda From Seattle

28 ounces cod fillets -- 4 fillets 7-8oz each or halibut or orange roughy

8 ounces dry white wine

1 teaspoon salt

3 slices sourdough bread -- 1 cup breadcrumbs

1 cup fat-free mayonnaise

1/2 cup fat free sour cream

1/2 cup red onion -- very finely chopped

2 teaspoons fresh dill -- chopped or 1 1/2 tsp dry dill weed

 

Marinate filets in white wine mixed with salt for 15-20 min. Drain and coat each filet with bread crumbs. Mix mayo, sour cream, red onion and dill together and set aside. Put 1-2 oz wine with 1-2 oz water in bottom of baking dish. Put breadcrumbed fish filets in baking dish and spread with mayo/sour cream mixture like frosting. Sprinkle with dill. Bake at 350º for 15-20 min. Check with fork to see if fish is done.
