Brown Stew

Recipe by: CNI Food, March 16 pg 11

7 Points Per Serving

 

1-1/2 pounds round steak cut into 1-2 inch chunks

2-3 T flour seasoned with salt and pepper

1 lg. onion, chopped

4 med. carrots, cleaned and sliced

1 C. beef broth

1 C. Guinness Stout

 

1. Toss the beef in the seasoned flour to coat. Add the oil to a nonstick pan and heat. Brown the meat and transfer to a plate.

2. Add the onions and carrots to the pan and saute until the onion is transparent. Return the beef to the pan and gradually add the broth and Guinness.

3. Bring to a boil and reduce the heat to a gentle simmer. Cover and simmer for approximatley 1-1/2 hours. Add more broth during the cooking time, if needed, and stir often.

Per Serving: 322 Cal, 13 gm Total Fat, 3 gm Sat. Fat, 56 mg Cholesterol, 293 mg Sodium, 17gm Carbo, 3 gm Fiber, 31 gm Protein, 40 mg Cal.
