Chicken With Apricots

Recipe by: Weight Watchers In A Flash Cookbook

6 Points Per Serving

 

1 pound boneless, skinless chicken breast, cubed

1 cup dried apricots, chopped

1 bunch scallions, thinly sliced (white and green parts separated)

2 tsp. peanut oil (I use sesame oil and it's delicious)

1/4 cup fat free chicken broth

3 tbsp. rice wine vinegar

3 tbsp. ketchup

2 tbsp. sugar

1 tsp. cornstarch dissolved in 1 tbsp. water

 

Heat oil in a large pan over medium heat. Add white parts of scallions and saute until soft, about 3 minutes. Add chicken and stir fry 3-5 minutes. Meanwhile, combine chicken broth, vinegar, ketchup, and sugar, stirring well to blend. Add sauce to chicken, along with dried apricots. Cover and simmer another 3-5 minutes, or until chicken is cooked through. Remove cover, stir in dissolved cornstarch, and cook until thickened.

Makes four servings

This recipe is absolutely delicious, not to mention easy. Since dried fruit can be a pain to cut, I put the apricots in the refrigerator for a while so they harden a little, then I use kitchen scissors to cut them into small pieces. I serve this meal with white rice and oriental style veggies and it is a big hit. Enjoy!

Sorry, forgot to add that you use the green parts of the scallion to garnish the dish before serving. Enjoy!
