Chocolate Cupcakes Vegan

This is easy to put together and my kids loved it. It uses no eggs or dairy products, satisfies chocolate cravings, and is fat free.
2 1/2 cups white flour
2/3 cup cocoa powder
2 cups sugar
1/2 teaspoon salt
6 Tablespoons apple sauce
2 1/4 cups water
1 teaspoon vanilla extract
2 tablespoons rice or white vinegar
2 teaspoons baking soda
In large bowl, whisk together dry ingredients. In separate bowl combine liquid ingredients. Stir liquid into dry ingredients until blended.Fill non stick sprayed muffin pans. Bake in preheated 375º oven for 25 minutes. Remove from pan and place on a rack to cool.
Makes 18 cupcakes.
