Diabetic, Low-Fat Cauliflower Cheese Bake

2 Points Per Serving

 

1 16-oz. package frozen cauliflower

1/2 cup shredded carrots

1 10-3/4 oz. can reduced-fat cream of celery soup

1 cup shredded fat-free cheddar cheese

2 tsp. dehydrated onion

1/4 cup skim milk

1 tsp. chopped fresh basil or 1/2 tsp. dried basil

 

Cook cauliflower according to package directions until tender; drain well. Arrange cauliflower in 1 1/2 quart ovenproof casserole dish. Combine soup, cheese, carrots, onion, milk, basil and dash of pepper. Pour over cooked cauliflower. Cover and refrigerate 3-24 hours. Before serving, bake uncovered, in 350º oven for 30-35 minutes until golden.

Makes 6 servings, approximately 1/2 cup each.
