Fruity Cookies

1.5 Points Per Serving

 

1 cup self rising flour

1 tsp ground cinnamon

1 tsp ground nutmeg

1 tbsp brown sugar

6 dried apricot halves, chopped

1/4 cup (20g) dried apples, chopped

3/4 oz raisins

1 tbsp olive oil

2 eggs, lightly beaten

1/4 cup skim milk

 

1. Preheat oven to 400ºF (200C). Coat a non-stick baking tray with cooking spray. 2. Sift the dry ingredients into a bowl and stir in the dried fruit. 3. Stir in the oil, eggs and milk until well combined. 4. Place tablespoons of the mixture onto the baking tray and bake in the oven for about 10 minutes.

TIP! Enjoy these as an afternoon snack. Or if you're really in a hurry, grab two cookies, a piece of fruit and a small container of skim milk for a 6 POINT breakfast on the go.
